These stories, propelled into the public eye via various media outlets, all of which are failing to ask the one question they need to pose in order to write a comprehensive article: WHERE ARE THE INSPECTORS?

Restaurants , historically, have never been expected to police themselves. This is the reason food handling professionals must be certified. Someone, with a least a modicum of knowledge pertaining to the proper handling of foods, is required to be a part of the food handling process as well and reliably available to oversee the handling of perishables.

Common pitfalls include the preparation of food hours before consumption without proper temperature control, inadequate cooking or reheating, cross-contamination, and poor personal hygiene among food handlers.

Such lack of attention to even the most basic food handling rules and regulations can [and has] led to serious health risks — not the least of which is causing the rise in food borne illnesses now being reported nationwide.

This, of course should only be emphasizing the importance of strict adherence to food safety guidelines to prevent foodborne illnesses. and, yet, the numbers only continue to rise.

Incredibly, most of these stories fail to even mention the number of safeguards that must have been ignored in order for these types of issues to exist.


Who, at each restaurant, is not doing their job and when will they be replaced? How are they passing the regular inspections required by law that involves a county food service professional to actually visit the site and inspect each restaurant? If so, how could they miss these egregious violations?

Some of the incidents cited in the first articles posted here are the direct result of equipment NEVER having been properly cleaned.

I wound up going across the street to HUMAN BEAN, got great service with a smile — happily spent more than I would have at JITB and left thinking I’ll never go to JITB again.
